Firebrick, Explained: Choosing Refractory Brick That Survives the Oven
Which refractory brick a wood-fired oven actually needs, the mortar that holds at temperature, and the build details old masons get right.

Every wood-fired oven lives or dies by one material decision: the brick that faces the fire. Ordinary clay brick spalls and cracks under thermal cycling; refractory brick — firebrick — is engineered to be heated and cooled for decades, which is why century-old bakery ovens still work.
What makes a brick refractory
Firebrick is high-alumina fireclay, fired dense. Two specs matter for an oven: duty class and density. Low-duty (up to ~1,750°F service) covers any bread or pizza oven with margin — kiln-grade high-duty brick is wasted money in cooking. Density is the real choice: dense firebrick stores heat and releases it steadily (the whole point of a retained-heat oven floor); light insulating firebrick stores nothing and belongs behind the dense brick as the insulation layer, never as the cooking surface.
A common, entirely legitimate budget path: solid medium-duty firebrick seconds from a masonry yard — cosmetic rejects cook identically.
The mortar is not optional chemistry
Portland-based mortar fails in the fire path; it calcines and lets joints open. The traditional mix — and still the best for ovens — is fireclay mortar: fireclay, sand, lime, a little portland (roughly 3:1:1:1 by the old rule), laid in thin joints. Refractory air-set mortars from a tub work too, rated far beyond oven temperatures. Either way the craft rule is the same one restoration masons repeat: the thinner the joint, the stronger the fire face — 1/8 inch, buttered tight.
Build basics the old ovens teach
The floor is laid dry — no mortar under the cooking surface — on a bed of fine sand or fireclay screed, so bricks can move and a cracked one can be swapped. The dome wants brick on edge for mass, insulation over it (ceramic blanket or perlite-cement), and a flue placed at the mouth, not the crown, so heat circulates instead of escaping. And every new oven gets curing fires: a week of small, growing fires to drive moisture out slowly — the single step impatience most often skips, and the single most common cause of a first-month crack.
